We were inspired by Nicole Tomlinson from the television show Battle Castle to try to make this medieval recipe – Medieval Mushroom Soup, which is from The Cuisine of the Teutonic Grand Masters in Malbork Castle, by Bogdan Gałązka. This mushroom soup takes three different types of flavourful fungus combined with port wine and butter to create a rich, fragrant dish that captivates the pallet.
Ingredients include mushrooms – chanterelle, crimini and porcini, vegetable stock, thyme, gnocchi, butter, oil, onion, garlic cloves, port wine, truffle oil, salt, pepper and parsley.
